Profile: All the rice is grown in the USA and milled in the USA. Koji rice is Yamada Nishiki (60% seimaibuai), Kakemai is Calrose (50%), and Mizu is Brooklyn's finest. Yeast is proprietary aromatic, fruit forward and clean.
